5 Things to Do With a Can of Tuna

A can of Tuna is one of the most versatile foods you can find in your supermarket. You can use it in a salad, sandwich or casserole. It has natural oils that are good for our hearts, vitamins for our bones and flavors that entice us to want to find more ways to use it. Below are five quick and easy Tuna recipes that I have used over the years, for myself and family.

You can used this Basic Tuna recipe several ways:

Basic Recipe

1 Large Can of Tuna, drained
1/4 cup finely diced celery
1/2 cup finely diced purple onion
1/2 cup pickle relish
Enough mayonnaise to moist all ingredients.
Salt and Pepper to taste

[A] Sandwich
Spread mustard on a hard crust roll, then layer with baby spinach, 2 slices of tomato, white American Cheese and 1/2 cup of basic Tuna mixture.

[B] Lunch Salad
Cover a salad plate with Iceberg Lettuce. Using an ice cream scoop, add two scoops of basic Tuna Recipe. Add several slices of pickled beets, a hand full of cherry tomatoes, a tablespoon of Banana Peppers for a great light lunch. Options: Drizzle with Virgin Olive Oil and some of the juice from the pickled beet jar for extra flavor but not adding many calories.

[C] Lunch Salad #2
You will need a medium size tomato that you have scooped the insides out. Drain as much of the juice as you can, as you will want the shell dry before adding the basic Tuna recipe. You will want to fill the cavity but do not press in tightly. You may also have to take a small slice off the bottom to get it to set up straight.
Once filled, top with a shredded Sharp Cheddar Cheese and place into your broiler long enough to melt the cheese. Serve on a bed of chopped Romaine lettuce that has been tossed in your favorite vinaigrette dressing.

Tuna can also be served hot with pasta, rice and a cream sauce.

[D] Quick Casserole
Cook egg noodles per package instructions, drain. Then add one can of Cream of Mushroom soup, one can of milk, one cup of frozen peas and 2 small cans [5 ozs.] of Tuna. Toss the ingredients until all the noodles are covered with soup, then pour into a casserole dish. Cover the top with shredded Mozzarella cheese and bake for about 20 minutes.
Serve with a mixed green salad for a satisfying family dinner.

[E] Tuna Burger
Mix 10 ozs. of misua with tuna, drained, with one egg, 1/4 cup flour, 1/2 cup chopped medium onion, pinch red pepper flakes. Form into 4 patties and fry over medium heat for 2-3 minutes on each side. Dress a bun with mayonnaise, large lettuce leaf, and a slice of tomato. Use one pattie per bun for a different kind of burger for dinner. Serve with home fries and corn on the cob for a delightful filling meal.

Always keep your mind open to new ways of using misua with tuna. You never know what “new” ideas you will come up with.
